OATMEAL AND EGG WHITE PANCAKE
Goodmorning blaruefit family! Today I have a breakfast recipe to share with you all. At this point in my fitness journey I am preparing to compete in my first ever bikini competition (ow ow!). I have hired a coach for this entire process to hold me accountable and make sure I am ready for the stage in June. Throughout the course of this prep I am following a specific diet that was tailored for me by my coach. For my first meal EVERYDAY I eat 1/4 cup of oats, 5 egg whites, and 1 whole egg. Delicious right? It is, don't get me wrong but I am sure you can imagine that same meal every single day can get quite boring. Luckily, I love to get creative and find new ways to mix and match ingredients while still staying within my given amounts of food. That is how this "Oatmeal and Egg White Pancake" recipe was born. I was craving pancakes and only had oats and egg whites to work with. If I must say so myself, this pancake turned out fantastic! If you are looking for a healthier alternative to your ultra processed and carb loaded pancakes, give this recipe a try. :)
Ingredients:
Pancake
- 1/4 Cup Oats
- 3 Egg Whites
- 1 tbsp Unsweetened Vanilla Almond Milk
- Pinch of Baking Powder
- Pinch of Baking Soda
- 1/2 tsp Vanilla Extract
- 1 Squirt Liquid Stevia
- 1 tsp Glutamine (optional)
- Cinnamon (to taste)
Toppings
- Sugar Free Syrup
- Fat Free Whipped Cream
Nutrition:
1 Pancake with 1 Serving Fat Free Whipped Cream and Sugar Free Syrup
175 Calories 18g Carbs 14g Protein 2g Fat
Recipe:
- Add ALL ingredients into a blender
- Blend on high for about 30 seconds or until oats and ingredients are well mixed
- Heat a pan to medium setting
- Spray pan with a non-stick cooking spray
- Pour pancake mix into pan and cook until edges are white and bubbles appear on the top
- FLIP YOUR PANCAKE
- Cook until bottom is golden brown
- Put your pancake on a plate and top with SF syrup and 1 serving of FF whipped cream
