100 Calorie Mint Chocolate Cookies
Is anyone else starting to see holiday treats popping up in grocery stores? Do I feel like it is a bit early, sureeeee, but I also feel like 2020 has been a blur so I am going with it! One of my favorite things to do around the holidays (well, really whenever) is take some of my favorite recipes that would be considered not so “healthy/low calorie” and healthify them! This is exactly what I did with these mint chocolate cookies, most Christmas cookies that I see are around 200-250 calories per cookie!! With a few ingredient swaps I was able to make these delicious, soft, chewy, super minty and chocolatey cookies ringing in at just 100 calories per serving. I am all about eating the cookie, but if you can do it with less calories (or maybe even enjoy two) then that is a total WIN for me. Finally, a holiday treat that you can not feel so guilty eating!
Ingredients in 100 Calorie Mint Chocolate Cookies
All-Purpose Flour – I chose a basic all purpose flour for this recipe but if you need to swap in a gluten free option the Bob’s Red Mill Gluten Free Flour is always a good one to use.
Baking Soda/Salt
Swerve Sweetener Substitute - I am a HUGE fan of Swerve All Natural Sugar Replacements. I use these in all of my recipes where I am looking to save some calories and reduce sugar. In this recipe I use a mix of the granulated sugar and brown sugar. These substitutes bake beautifully and taste just like the real deal! Even better you can use a 1:1 ratio in recipe replacing sugars.
Hershey’s Special Dark Cocoa - I love using this cocoa because it has a beautiful rich chocolate taste but does not have added sugars to it. Be careful when you are shopping and look for unsweetened or no added sugars on the ingredients. Saving you major calories! Shop it here :)
Liquid Egg Beaters – Rather than using full eggs in this recipe I chose to swap in Liquid Egg Beaters to reduce the fat (and calories). I personally use the Egg Beaters that you find in the yellow boxes, not the white egg whites. Either will work but I have found the egg beaters tend to bake better in recipes.
I Can’t Believe it’s Not Butter Light – this is a HUGE calorie saver. When you whip the swerve and I Can’t Believe it’s not Butter the consistency is a tad different than if it were real butter and sugar, but don’t worry the cookies come out just fine! I Can’t Believe it’s Not Butter Light is 40 calories per tablespoon versus real butter which is 100 calories per tablespoon. If you cannot find the light version the original will work as well it has 60 calories per tablespoon.
Peppermint and Vanilla Extract – give you the peppermint flavors of the holidays!
Ghirardelli Peppermint Baking Chunks - These Ghirardelli Peppermint Chunks definitely take your mint chocolate cookie to the next level of minti-ness but if you prefer a little more of a subtle taste you can swap these baking chunks for some classic white chocolate chips. The Ghirardelli chunks can be a little hard to find so if you need a substitute here is a good option, Andes Holiday Creme De Menthe and Peppermint Crunch Chocolate Mint Baking Chips.
This recipe does not include the chocolate coating you see in the photo. Feel free to add this on or just do a little melted chocolate drizzle. Have fun with these cookies! I think they would even be good making into a cookie sandwich, yummmmm!
